UCF Football: Top 3 prospects for 2021 NFL Draft

3. Eric Mitchell, LB

UCF’s defense has been much maligned over the past few years, but there are some bright spots on there and one of them is Eric Mitchell. He had his best season since he arrived in Orlando in 2017 and has helped UCF achieve the level of success that they have had.

Mitchell finished 2019 with 77 total tackles, three sacks and a forced fumble and he could be in for an even bigger season in 2020.

The Knights’ linebacker is a hard-hitter with good size at 6-foot-2 and 240 pounds and that is the most developed part of his game right now and I would probably project Mitchell as a day three prospect right now.

If he can show he is a more complete linebacker by developing better coverage skills and pursuit to the ball, Mitchell could see a rise on teams draft boards for 2021.
